Coffee grounds contain thousands of volatile aromatic compounds. Polar multivalent ions like Magnesium (Mg²⁺) and Calcium (Ca²⁺) act as molecular magnets that drag flavor notes into liquid brew.
Magnesium has a higher charge density and smaller ionic radius than calcium, giving it superior affinity for oxygen-rich fruit florals without precipitating as boiler limescale.
2. The Carbonate Buffer Role
Alkalinity (bicarbonate buffer) acts as an acid shock-absorber:
Too little buffer (<30 ppm) makes light roasts taste unpleasantly sour and vinegar-like. Too much buffer (>80 ppm) wipes out delicate acidity entirely, leaving the cup muddy and dry.
